In a small bowl beat together the Roquefort and butter to obtain a paste. Chill the cheese mixture. Grill the steaks over hot coals to your taste, no more than 7-12 minutes total. Season with salt and pepper. Arrange the steaks on a warmed serving platter and place a spoonful of the cheese mixture on each steak. The cheese mixture will melt into a delicious cream sauce. Serve the remaining cheese mixture in a serving bowl. Serve with scalloped potatoes with herbs or French fries or a potato cake made without cheese.
